Bitchin' Breakfast Tofu Scramble
I make this every morning!


• dice a green pepper
• dice a red pepper
• dice an onion
• small can of corn (or frozen, whatever)

Mix it all together. Put as much as you're going to make in a frying pan. Put the rest in the fridge for next time.

• Saute in the pan with olive oil, salt & pepper.

After a couple minutes add:

• 1 spoonful jar crushed garlic (use fresh if you want to chop it)

Stir and then let it simmer without stirring. You want to brown the bottom a little. After a couple minutes, push it to the edges of the pan making the middle clear:

• Add tofu to the middle of the pan.
(1/3 a tub for each person)

Cut it with your utensil into small pieces or mush it up to your liking.

On top of the tofu, add:

• a bunch of salt
• pepper
• a bunch of ground ginger
• a bit of ground clove
• a bit of curry powder
• a bit of tumeric for color (optional)

Add a some water so the spices cook into the tofu. Stir the tofu up. Then stir everything up. Let it cook for another minute and then you're done!

Eat.

HOT TIP!
Put your plate in the microwave for a minute to heat it up so it doesn't cool off your food! Put a stack in, 1 minute for each plate. Works for me.
